The Finnieston strip and Merchant City are where most of our commercial kitchen work sits, and they share a specific problem: a dense run of food businesses in buildings that were never designed for them, often Victorian, often with flats above. Grease loading is high and the drainage is shared, which is why a maintenance interval matters more here than it would on a purpose-built retail park unit.
Flats above shops are the Glasgow complication worth planning around. A kitchen blockage in a unit sharing a stack with residential flats above does not stay a commercial problem, it becomes a factor problem and a neighbour problem at the same time. Smells at a floor gully usually mean a dry or damaged trap rather than a blockage, which is a different and smaller job. For an office, a shop or anywhere without a kitchen, reactive is usually the right answer and a contract would be money spent on visits you do not need. Call us when something goes wrong. For anywhere doing food, the maths goes the other way and it is not close. Grease builds at a rate you can predict from the menu, so a blockage is not bad luck, it is a date you have not looked up yet. A planned visit happens before opening and costs what it costs. An emergency happens mid-service, costs more, and the real bill is the covers you did not turn.
